White Christmas meets rocky road without the sugary nonsense! This easy 6-ingredient recipe is a fun one to make with the kids, perfect for the holiday season. Yum!
ingredients
- 500 g Noshu 95% Sugar Free White Choc Baking Chips
- 1 ½ cups puffed rice
- 300 g low sugar or sugar free jellies
- 120g pistachios
- 1 cup desiccated coconut
method
Line a silicone loaf pan with baking paper.
MIX
- Place choc chips in a large heatproof bowl and microwave on low heat in 20 second increments, stirring very well in-between, until chocolate is completely melted.

Add the puffed rice, jellies, pistachios and desiccated coconut, and stir to combine.

Spoon into the prepared pan and press down firmly.
SET

Place into the fridge for 3-4 hours (preferably overnight) to set.
SERVE
- Cut into slices of your desired size and serve!
STORE
Store refrigerated in an airtight container for up to 1 week.
